Job description

To provide services to support Dunkin' and Baskin-Robbins cross functional teams with all aspects of regulatory and nutrition related information needs. To administer the documentation systems that house critical documented intellectual properties including: nutrition, ingredient, allergen and recipe build information.

RESPONSIBILITIES

  • Uses and maintains systems and processes to provide and review nutritional information for product and process specifications, retail labeling and consumer information. 35%
  • Creates and maintains the nutritional information and ensures consistency across Dunkin' and Baskin-Robbins websites, menu boards, mobile apps, in-store flavor strips, handouts and brochures. (Supports US territory locations outside of the continental US, as needed.)  All documentation reflects current product specifications and recipe builds. 20%
  • Manages and supports processes and associated documentation for preliminary nutritional work used in the guidance of the brands product portfolio. 10%
  • Maintains the nutritional, ingredient and allergen, and relevant technical information (i.e. caffeine content) on Dunkin' and Baskin Robbins websites and mobile app in accordance with product specifications and current core menus. Provide guidance and recommendations to enhance the consumer experience of digital nutrition content on brand websites/mobile app and technology options of the future. 10%
  • Reviews and provides guidance on regulatory compliance for claims, advertising materials and product packaging. Regulatory Mgr/Sr. Mgr will participate and provide final approval in the decision making process. 10%
  • Creates and maintains cake labeling documentation in accordance with regulations. Ensures the functionality of the cake portal is kept current to support the standard cake build options and process in-restaurant. This includes working with marketing and IT to create and approve portal functionality changes as needed to either support revisions to cake build process and/or FDA regulations. Reviews and provides feedback on all content prior to approval and release for use. 5%
  • Maintains nutritional data, claim information and documentation to validate brand "better-for-you" menus. 5%
  • Support the consumer care/navigator teams on nutrition-related inquiries as required and necessary. 5%

EDUCATION & EXPERIENCE QUALIFICATIONS

  • Minimum Bachelor of Science; Nutrition degree preferred; RD certification a plus
  • 2 or more years of experience in quality assurance or related food industry role managing food product information such as nutritional information and ingredient labeling. 2 or more years of experience in nutrition and regulatory affairs to include: all aspects of food labeling, claims, generate of nutrition facts panels and ingredient statements and product packaging reviews

REQUIRED KNOWLEDGE, SKILLS & ABILITIES 

  • Knowledge of and experience with the FDA Code of Federal Regulations pertaining to food, food manufacturing and the model food code for restaurants.
  • Knowledge and experience in generating nutrition facts, ingredient statements, allergen disclosures, claim compliance.
  • Knowledge and experience in review of retail food packaging for compliance with FDA Code of Federal Regulation requirements.
  • Knowledge of and experience using the USDA Dietary Guidelines.
  • Experience with nutrition software such as ESHA Genesis.
  • Industry-related training coursework/seminars (i.e AIB Labeling, Keller & Heckman Food Law, etc.) a plus.

Project Accountabilities

Participate in the initiation and planning phases by gathering project data and requirements and providing input on project activities and timing. Utilize project management tools and disciplines to complete project assignments and meet deadlines. Help identify and resolve project–related risks and issues. Participate in the evaluation of the project by giving input for post-project evaluations and lessons learned. Provides guidance and feedback in all relevant areas of the product development phases to include: project briefs, recipe development, product claims, product packaging, advertising materials, and nutrition and ingredient information.

Decision Making Authority

Reviews and provides guidance on regulatory compliance. Regulatory manager (and above) will participate and make final judgement in all decisions.

Approximately 0-20% travel may be required in support of the position responsibilities. May require travel (US) with overnight stays involving weekends and/or requiring airplane travel.
